Manchester Food Research Centre is pleased to offer a range of Chartered Institute of Environmental Health (CIEH) Food Hygiene Courses   

Well trained staff are vital to any business and these courses aim to provide both practical food hygiene advice as well as meet your legal responsibilities in regard to training.  For people working in a catering environment the Level 2 Award in Food Safety has been developed to address the new occupational standards in food safety and the recent changes in food safety legislation.

The training programme takes approximately 6 hours to complete and involves a series of teaching sessions followed by an examination consisting of 30 multiple choice questions.

Level 2 Award in Food Safety in Catering

Under food hygiene legislation those staff who handle or prepare open, high risk foods should receive training in food hygiene matters commensurate with their work activities and as a guide this should be within three months of starting work.

Basic Food Hygiene Course Syllabus

·       Food Safety Law

·       Food Safety Hazards

·       Temperature Control

·       Refrigeration, chilling and cold holding of foods

·       Cooking, hot holding and re-heating of foods

·       Food handlers

·       Principals of safe food storage

·       Cleaning

·       Food premises and equipment

·       Exam – Thirty question multiple choice exam.

Friday 20th June 2008             10.00- 6.00

Wednesday 23rd July 2008    10.00- 6.00

Cost: £50 per candidate inclusive of all course materials and the exam paper.

 

Level 3 Award in Supervising Food Safety in Catering

This course is suitable for supervisors in food-related industries including retail, food manufacturing and food production. The CIEH Certificate is a nationally recognised qualification that provides evidence of intermediate level food hygiene training and is taught over 3 full days, followed by a multiple choice examination.

·       Applying and monitoring good hygiene practices

·       Implementing good food safety procedures

·       Contributing to the safety training of others

Friday 2nd, 9th and 16th May 2008     10.00- 5.00

Friday 4th, 11th and 18th July 2008    10.00- 5.00

Cost: £200 per candidate inclusive of all course materials and the exam paper.

 

Level 4 Award in Managing Food Safety in Catering

This course is suitable for Managers, supervisors and senior hygiene personnel in food-related industries including retail, food manufacturing and food production. The CIEH certificate provides evidence of advanced food hygiene training, and is taught over 6 full days. This is followed by two workplace assignments and an examination.

Cost: £400 per candidate inclusive of all course materials and the exam paper
